Chicken Corn Chowder.... And the winner is...
I love fall. I love the changing of all seasons but my favorite by far is fall. The smell of the cool air, changing of colors, the smell of people burning their first fire in their fire place and of course the start of a season of cooking comfort food. Every year on our first cool day I make Chicken corn chowder. I don't have a picture due to the fact that I haven't made it cause Josh has been out of town and If I am going to make a dish that wonderful you better believe My man needs to be home to eat it. Enjoy!
Ingredients:
4 Chicken breasts cut into small bites
2 cans of cream corn
4 cups of Monterrey Jack Cheese (2 bags)
1 can of chopped green chilies
1 medium carton of half and half
1 medium onion chopped
1 heaping tsp. of roasted minced garlic
2 tbls. of butter.
tsp. of cumin
Tabasco
blue corn chips
cilantro
In a large skillet or big pot melt your butter and add your onion and garlic to saute until onions are soft. Add your chicken and cook until white all the way through. After chicken is cooked add your corn, green chilies, half and half and your cheese. Stir and let the cheese melt. Add your cumin and shake in a few shakes of Tabasco. Stir. Serve on top of Blue Corn chips and top with cilantro! Salt and pepper to taste. Josh and I always add a few extra dashes of Tabasco to our individual bowl.
